Ingredients
  • 3.5ounces low fat chicken breasteasier if using already cooked portion
  • 1tbsp minced garlic
  • 1tsp curry powder
  • salt and pepper to taste
  • chicken broth
  • vegetable of choicechopped zucchini or cauliflower works best
Instructions
  1. Sauté onions and garlic in small amount of chicken broth until soft, add chicken and spices. Add enough chicken broth to make 1 serving soup, about 1 cup. Add raw vegetable, simmer until soft. Of course you can make several servings at once and enjoy the leftovers later in the week.
