  • 3.5 ounces low fat chicken breast easier if using already cooked portion
  • 1 tbsp minced garlic
  • 1 tsp curry powder
  • salt and pepper to taste
  • chicken broth
  • vegetable of choice chopped zucchini or cauliflower works best

Ingredients
  • 3.5 ounces low fat chicken breast easier if using already cooked portion
  • 1 tbsp minced garlic
  • 1 tsp curry powder
  • salt and pepper to taste
  • chicken broth
  • vegetable of choice chopped zucchini or cauliflower works best
Instructions
  1. Sauté onions and garlic in small amount of chicken broth until soft, add chicken and spices. Add enough chicken broth to make 1 serving soup, about 1 cup. Add raw vegetable, simmer until soft. Of course you can make several servings at once and enjoy the leftovers later in the week.
