Chicken Curry Soup

Ingredients
- 3.5 ounces low fat chicken breast easier if using already cooked portion
- 1 tbsp minced garlic
- 1 tsp curry powder
- salt and pepper to taste
- chicken broth
- vegetable of choice chopped zucchini or cauliflower works best

Instructions
- Sauté onions and garlic in small amount of chicken broth until soft, add chicken and spices. Add enough chicken broth to make 1 serving soup, about 1 cup. Add raw vegetable, simmer until soft. Of course you can make several servings at once and enjoy the leftovers later in the week.
